Matt's Nine Layer Sandwich



Gluten Free Bun
Trader Joe's Mayonnaise
Guacamole
Whole Food's Bacon
Turkey from Otto's Turkey Farm in Middleville Michigan
Salami from Trader Joe's
Cucumbers
Green Onions from Anne's Heath Food Store in Hastings Michigan
Gluten, Casein and Soy Free Cheese

Bun Recipe
Adapted from a recipe in Special Diets for Special Kids by Lisa Lewis, Ph.D.

1/2 cup Brown Rice Flour
1/2 cup Tapioca Flour
1/2 cup Potato Starch
1-2 teaspoons sugar
3 teaspoons Ener-g egg replacer or 1 egg
2 teaspoons xanthan gum
2 teaspoons baking powder
Mix dry ingredients then add:
1/2 cup sunflower, safflower or olive oil
1/2 cup rice milk

Mix, scoop onto baking sheet and flatten.

Bake for 17-20 minutes at 400 degrees.
