Noodles

Thank you to my friend, Nichole, for letting me know about these noodles. They are sweet potato or glass potato noodles made with only sweet potato and water. They are very affordable at our local Asian American store. The noodles are also quite tasty.

Health Care Crisis

Health Care Crisis

This article is written by Dr. Hendricks. Through God's provision he was my doctor the year I was very ill and he saved my life. I continue to be grateful for Dr. Hendricks' knowledge and dedication. I haven't been able to get IVs here, so I began ordering the energy drink he invented (RIZE). It has been a tremendous help to me.

Cellophane Noodles

My kiddos really enjoy eating cellophane noodles. The noodles are made with potato starch and mung bean starch. They are quick and easy to prepare. It is nice to have a pasta option for my gluten free and rice free kiddo!

Quinoa Beet Salad

The original recipe for this salad came from Living Without Magazine. I made a few changes by leaving out the sweetener and yogurt and adding lettuce. Here is our recipe:

Lettuce
Quinoa (cooked)
Beets (canned)
Lemon juice
Mint leaves
Sunflower seeds
Garnish with lemon zest

Our Swing

Matt made this swing for our kiddos. Abigail, Matthew and Josiah spent most of today swinging!
