Birthday Cupcakes

Matt helped me make Strawberry Cupcakes for my birthday.
On their own the cupcakes were disappointing.   Once frosted they greatly improved.
 My kiddos liked them!

Zucchini and Chickpeas with GF Penne

16 oz GF penne pasta

2 10 oz cans Italian style zucchini
(or fresh zucchini, sliced and roasted)

1 can chickpeas

green olives, pitted and sliced

28oz can diced tomatoes

small can crushed tomatoes in basil

roasted red peppers, diced
(optional)

The orginal recipe is from Clean Eating Magazine.  The above is my variation...made less spicy, less costly and less labor intensive.

Chicken Salad and Homemade Tortillas

Abigail is always a big help in any endeavor.  We used this recipe from Gluten Free Cooking School to make gluten free tortillas.  Abby rolled all but one out and put them in the pan. Matt cooked chicken for me and then I added sliced grapes, chopped celery and onion along with Most Things Free Mayonnaise.

A Day in DC

Gluten Free in DC

Yesterday we spent the day in DC and had lunch at Austin Grill.  They have a gluten free menu and delicious food.  Abby said the hot dog and fries were the meal of her dreams.

Sticky Fingers Bakery has gluten free vegan cupcakes and chocolate chip cookies.  This was our last stop of the day and they only had four cupcakes left.  All of them came home with me!  Many thanks to my husband for braving DC traffic and taking 20 minutes to go six miles, so that I was able to buy those cupcakes.
