Cabbage is a favorite food around here. My kiddos get excited as we put more and more heads of cabbage in the shopping cart. We usually buy one purple head and five or six green heads every two weeks. We eat the purple cabbage in salads and the green in a variety of ways. One way is to use it for a wrap. These wraps are filled with quinoa, avocado, olives, onion, and roasted red peppers (from a jar).
Cabbage has many health benefits including:
anti-inflammatory properties
avoiding constipation
cancer prevention
high in vitamin C
Another benefit of cabbage is the inexpensive cost. The most I have paid for green cabbage is 69 cents a pound, but it is often under 40 cents a pound.
