Beet Hummus

one or two medium beets or several small beets, cooked
(Trader Joe's sells pre-cooked beets)
 
15 ounces pinto beans, cooked or canned
 
2 teaspoons vinegar
 
1/4 cup extra virgin olive oil
 
1 teaspoon sea salt
 
 
place all ingredients in blender and blend until smooth

My kiddos really like this hummus and even Matt does!
We eat it with chips or as a salad dressing
