Roasted Beets and Apples

5 medium beets boiled and diced
4 Golden Delicious apples, diced
2 Tablespoons apple cider vinegar
1 teaspoon salt

Place all ingredients in a greased 9x13 baking dish. Bake at 350 degrees for 45 minutes.

We had this for an after dinner treat. It is quite tasty.

Bountiful Blessings

Over the summer our mail carrier introduced herself and we chatted a few times. By God's providence she is a very kind lady. After Nathaniel was born she asked what she could do for us. Since we have so many allergies I mentioned the best items are fruit and vegetables for my kiddos. Later that week we were blessed with boxes of fresh produce. Sweet potatoes, squash, peppers, apples, kale, tomatoes, pumpkins and more by the box. It was nice to have quick and easy meals from fresh produce.
Last night our door bell rang and our mail carrier came again with boxes of squash and sweet potatoes, bags of apples and oranges, beets, cucumbers, and a garbage bag full of kale and another of collards. We are thankful for our mail carrier's kindness and generosity! She has been a true blessing, even contacting someone to stop by and take care of a project while Matt was gone.
Today for lunch kiddos had baked acorn squash with kale, collards and apple slices. It was an ideal meal for this dreary day.
