Pumpkin Bread

Abigail, Matthew and Josiah have been making this pumpkin bread at least once a week. 
 They really like it! 
1 large can pumpkin
1/2 cup sunflower oil
1/2 teaspoon sea salt
1/4 cup applesauce or sugar
2 teaspoons cinnamon
2 Tablespoons Chia gel*
1 1/4 teaspoon baking soda
1/2 teaspoon cream of tartar
1 cup sorghum flour
1/2 cup tapioca flour
1/2 cup arrowroot
1/4 teaspoon xanthan gum
bake in a greased 9x13 baking dish at 350 degrees for 30 minutes or until top is golden brown
*Chia gel:  place 2 Tablespoons chia seeds in 1 cup water.  Let sit on counter for 12 hours stir every five minutes for first thirty minutes then store in refrigerator.
