Picnic Table
God gave me a wonderful husband. I printed the plans for this table and asked Matt to build it. A week later the table was finished!

Quinoa Chili and Roasted Cabbage
Roasted Cabbage
Slice cabbage 1/2 to 1 inch thick
drizzle with olive oil
sprinkle with paprika
bake at 400 degrees for 45 to 50 minutes
Quinoa Chili
1 cup red lentils
1 cup quinoa
2 cups black beans, canned or cooked
red peppers and onions (frozen bag)
2 -3 teaspoons chili powder
1/8 teaspoon cinnamon
1 28oz can crushed tomatoes with basil
(I added another can of tomatoes when reheating the leftovers)
Place lentils and quinoa in pan. Add 4 1/2 cups water, bring to a boil then reduce to simmer. Stir in beans, peppers, tomatoes and spices. Cover and continue to simmer 35 to 40 minutes or until lentils and quinoa are cooked.

Pumpkin Hot Chocolate
2 C milk almond milk
¼ C canned pumpkin
1 teaspoon cinnamon
2 1/2 tbsp unsweetened cocoa
2 1/2 tbsp maple syrup
pinch of sea salt
warm all ingredients and enjoy!

Overnight Breakfast Pudding
1 banana, mashed
1 cup rice or almond milk
3 Tablespoons chia seeds
1 1/2 teaspoon cinnamon
combine all ingredients in a lidded container
place in refrigerator
enjoy the next morning

Beet Hummus
15 ounces pinto beans, cooked or canned
2 teaspoons vinegar
1/4 cup extra virgin olive oil
1 teaspoon sea salt
place all ingredients in blender and blend until smooth
(adapted from a recipe in Weelicious by Catherine McCord)
My kiddos really like this hummus and even Matt does!
We eat it with chips or as a salad dressing
Chicken and Eggplant
chopped squash
chopped and peeled eggplant
peppers and onions (I use frozen)
chicken thighs
can of crushed tomatoes
place in roaster and bake at 350 degrees
serve with quinoa or rice

To Go Meal
Eggplant Hummus
2 large eggplants
1/4 cup extra virgin olive oil
2 teaspoons vinegar
sea salt and pepper
fresh or dried parsley
pierce eggplant all over with fork
bake at 400 degrees for 45 minutes or until tender
scrape out cooled eggplant and discard skin
place eggplant in blender
add olive oil, vinegar, sea salt and pepper
blend until desired consistency
to serve:
place in red pepper quarters
sprinkle with parsley

Cucumber Beet Sandwich
peel cucumber and slice into 1 inch thick pieces
scoop out part of the middle of each slice without going all the way through
place beet hummus in middle of cucumber

Quinoa Granola
Cook 2 cups quinoa with 3 cups water and 1 cup orange juice.
Add 1 1/2 teaspoon cinnamon and 1/2 teaspoon sea salt.
Once cooked add chopped almonds and sunflower seeds.
Add almond milk and a chopped apple when ready to serve.

Birthday Cookies
Abby's Birthday Cookies
1 cup Brazil nuts
1/2 cup shredded coconut
Teaspoon of water
Handful of Goji Berries
Handful of Enjoy Life Chocolate Chips
Place nuts in blender and blend until fine. Add coconut and blend. Pour into bowl. Add water, berries and chocolate chips and mix. Form into cookie shape and serve.
Abigail said they are good and taste like coconut chocolate.

Four Generation Gift
Abigail was blessed with a four generation gift. Her apron is made from her Great Great Grandma Parkhurst's apron. The pillowcase belonged to her Great Grandma Jean. The bracelet was made by Grandma Mona for me and passed on to Abby. A dress of mine was made into her birthday skirt.
Another pillowcase from Great Grandma was made into the bunting.
It is a blessing to have a daughter who joys in gifts from her grandmas and homemade items!
