Gluten Free Hot Dogs in a Blanket


Gluten Free Pizza Crust
From Special Diets for Special Kids by Lisa Lewis, Ph.D.
(half recipe - for 4 hot dogs or 1 pizza)

1 cup water
1/8 cup olive oil
3/4 teaspoon apple cider vinegar
1 tablespoon sugar
1 teaspoon garlic salt (we use sea salt)
1 teaspoon baking powder
1 teaspoon Xanthan gum
1 cup Beechnut Baby Rice cereal
1 cup rice flour

Combine first three ingredients. Set aside. Combine the remaining ingredients, and add them to the oil mixture. Mix until thoroughly combined.

Spread on sprayed pizza pan and bake at 400 degrees for 10-15 minutes. Remove from oven, add sauce and top as desired. Return to the oven and bake until light brown around the edges.

After baking, but before topping, the crust may be cooled and frozen for later use.

For hot dogs pat the dough between hands and form around hot dog. Place on greased baking sheet and bake at 400 degrees for 30 minutes.

This dough is sticky. It helps a little to put shortening on your hands.

This didn't work at all! I know I must have done something wrong, I tried to substitute the xanthan gum with an egg, my "dough" came out looking more like pancake batter. Theres no way I could have picked it up and patted it out to wrap hotdogs in like I was planning on doing. Im very new to gluten free eating and cooking so I was really hopeful for this one. Any advice?

Hi Andrea,
Sorry this didn't work for you! Xanthan gum is used to hold the flour together similar to gluten in regular flour. You could use guar gum instead.
This recipe is one of my favorites... if you are able to get some xanthan gum or guar gum I would try it again! Feel free to email me with any questions!
