Our Favorite Cookies
2 cups almond meal
¼ teaspoon sea salt
½ teaspoon baking soda
¼ cup sunflower oil
1 1/2 tablespoons maple syrup
1 tablespoon vanilla or water
lots of enjoy life chocolate chips
mix ingredients then form cookies and bake at 350 degrees for 15 minutes
These have become our favorite cookie and they are so easy to make. This recipe also works with cashew meal (now being sold at Trader Joes). The cashew cookies didn't bake as long and were a little more crumbly. However, they are delicious!

Sandwich Bread
Last night I made my kiddos a turkey sandwich with paleo naan. I called it sandwich bread even though it turned out similar to a pancake. Kiddos liked it.
Sandwich Bread
1/2 cup almond meal
1/2 cup tapioca flour
1 cup coconut milk (also works well with almond milk )
mix together then drop into a hot skillet that has a nice coat of hot oil. Cook like a pancake turning part way through.

Pumpkin Chili
This chili looks so pretty when taken out of the oven and the pumpkin adds nice flavor.
Pumpkin Chili
1 medium pumpkin (cut top off, scoop out seeds)
place pumpkin on a baking tray and bake at 350 for about 1 1/2 hours or until soft. You don't want to over bake.
While pumpkin is baking:
brown- burger, sausage and bacon
saute peppers and onions
peel, chop and boil 2 sweet potatoes
cook quinoa
I put the meat and a bag of frozen peppers and onions in the oven while the pumpkin is baking.
When everything is ready place the meat, peppers and onions, sweet potatoes, quinoa, prepared black beans and a large can of crushed tomatoes into the pumpkin. Add chili powder to taste.
Bake 1/2 hour

Pirate Concert
We enjoyed a pirate concert performed by the Virginia Symphony Orchestra as part of their PB & J series.
