Fort Story
Earlier this month we spent an afternoon at Fort Story. We took a tour around the grounds where Old Cape Henry Lighthouse stands, the small National Park located on the base and were able to go inside the chapel pictured below.

Healthy Cookies
Peanut Butter Oatmeal Cookies
Here is the original recipe from The Skinny Fork:
Ingredients:2 Ripe Bananas, Mashed
1/3 C. Reduced Fat Peanut Butter
2/3 C. Unsweetened Applesauce
1 Tsp. Vanilla
1/2 Tsp. Salt
1/2 Tsp. Cinnamon
Dash of Ground Cloves
Dash of Ground Nutmeg
1 1/2 Quick or Old Fashioned Oats
1/4 C. Nuts (I used dry unsalted peanuts.)
1/4 Semi Sweet Chocolate Chips
1/4 C. Unsweetened Shredded Coconut
Directions:
Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set aside. Mix together the bananas, peanut butter, applesauce, vanilla, and spices. Add in the oats, nuts, chocolate chips, and coconut; stir until well combined.
Spoon about 2 tbsp. of the cookie mixture onto the lined baking sheet, leaving an inch or two between each. I placed a few more chocolate chips on top of each cookie. Bake for 20-30 minutes and allow to cool slightly.
My notes:
These cookies taste like banana bread. I left out the cloves and nutmeg and added extra cinnamon. Also, our cookies had extra chocolate chips and no coconut or nuts. They taste better cold than right from the oven. I would make these again!

An Adventure
Abigail, Matthew and Josiah are visiting Grandpa and Grandma. Kiddos planned adventures for weeks leading up to their stay. They are enjoying playing outdoors and having Uncle Matt and Aunt Ellie and Gavin for neighbors.
