Gluten Free and Vegan Brownies!!
Original recipe from Food and Wine, September 2006
Ingredients:
1/2 cup plus 2 Tablespoon Bob's Red Mill gluten free, all purpose baking flour
1/2 cup sugar
1/4 cup unsweetened cocoa powder
1 1/4 teaspoon baking powder
1/8 teaspoon baking soda
1/2 teaspoon sea salt
1/4 teaspoon xanthan gum
1/2 cup applesauce
1/4 cup sunflower oil
1 Tablespoon vanilla
1/2 cup dairy and gluten free chocolate chips
Combine dry ingredients then add applesauce, oil and vanilla. Mix well then fold in chocolate chips.
Spray mini-muffin pan or line with paper or grease an 8x8 baking pan. Spoon or pour in batter and bake at 325 degrees for 15 minutes or until set.
Allow to cool in pan 15 minutes.
These are the BEST gluten free and vegan Brownies!

Mango Smoothie
Ingredients:
1 or 2 Mango, peeled and sliced (about 2 cups)
1/2 fresh medium pineapple, cored, peeled and chopped (about 1 cup)
less than 1 tsp ginger or cinnamon
1 cup milk
1 tbsp honey
Place ingredients in blender and process until smooth.
Chill before serving.
Refreshing!

I omitted an ingredient plus a few steps to make a smoothie rather than a shake and so it would be easier to prepare.
1 or 2 Mango, peeled and sliced (about 2 cups)
1/2 fresh medium pineapple, cored, peeled and chopped (about 1 cup)
less than 1 tsp ginger or cinnamon
1 cup milk
1 tbsp honey
Place ingredients in blender and process until smooth.
Chill before serving.
